Keys to hot food preservation:

  • Temperature: Keep food at a temperature of at least 60 °C to avoid bacterial growth.
  • Time: Do not leave food at room temperature for more than 2 hours. If in a warmer environment, this time is reduced to one hour.
  • Storage: Keep food warm in closed containers and food warmers to avoid external contamination.
